CARMELIZED ONION STUFFED BURGERS W/FETA CHEESE SAUCE

I was given a recipe for onion stuffed burgers, that called for a slice of raw onion to be placed in the middle. My husband is not a fan or raw onion, so I carmelized a red onion with fresh garlic instead. He said it was one of the "top five" burgers he has ever had. I'll take it.
Additionally, the cheese sauce can be refrigerated and used as a spread for other sandwiches.
Ingredients
- Feta Sauce:
- 4 oz crumbled feta cheese
- 4 oz cream cheese
- 1/4 cup Greek Yogurt
- 1/4 cup seeded, chopped Jalapeno
- peppers
- 1 scallion, sliced (white and green
- parts)
- Burgers:
- 2 lbs ground chuck
- 1 large red onion
- 1 Tbs fresh chopped garlic
- 1 Tbs olive oil
- 1 tsp granulated sugar

Step 1
Sauce: Add all ingredients to food processor and process until smooth. Set aside.
Burgers: In a small skillet, heat the olive oil, add the sliced onion, sugar and garlic. Cook, stirring occasionally, approx 20 minutes. Cool and move to paper towels and blot.
Shape beef into eight equal round patties. Top four of the patties with the onion/garlic mixture, leaving enough room on the sides to seal with a remaining patty. Grill burgers on clean grate preheated to medium high, watching carefully for flare ups for approx 4-5 minutes. Flip burgers and cook 2 minutes then top with desired amount of cheese sauce and grill additional 2-3 minutes.
Served on toasted rolls with tomato and lettuce or your choice of other toppings.
