Ingredients
- 1 # peeled, deveined 36/40 shrimp
- 1/2 cup minced green onion
- 1/2 cup minced red pepper
- 1 tbsp olive oil
- 1/2 cup Italian seasoned breadcrumbs
- 1 large egg slightly beaten
- 1/2 cup mayonnaise
- 1 tbsp fresh lemon juice
- 1 tsp Old Bay Seasoning
- 1/2 tsp pepper
- Dash of Worcestershire sauce
- 2 tbsp butter
- Creamy Caper Dill Sauce
- 3/4 cup mayonnaise
- 1/2 cup sour cream
- 1/4 tsp grated lemon rind
- 2 tbsp fresh lemon juice
- 1 tbsp drained capers
- 2 tsp fresh dill
- 1 tsp Dijon mustard
- 1/4 tsp salt
- 1/4 tsp pepper

Preparation
Step 1
Pulse shrimp in a food processor 8 times or until finely chopped.
Saute green onion and red pepper in hot oil in a large non-stick pan 3-4 minutes or until tender.
Stir together green onion mixture, bread crumbs and next 6 ingredients. Gently fold in shrimp Shape mixture into 28-1" patties (about 1 tbsp each.)
Place on aluminum foil lined baking sheet and chill 2-8 hours.
Melt butter in a large non-stick pan over medium heat. add patties and cook 3-4 minutes on each side or until golden. Keep warm on a wire rack in a 200 dgree oven. Serve with Creamy Caper Dill sauce. Garnish with fresh dill.
Sauce: stir all ingredients together. Cover and chill up to 3 days.
