Ingredients
- 1/2 c quick cooking brown rice
- 1 medium onion
- 2 ribs celery, sliced
- 2 large carrots, sliced
- 2 tilapia filets (5-6oz each)
- 1 c canned diced tomatoes, drained
- 2 T chopped cilantro, parsley, or basil
- seasoning salt

Preparation
Step 1
Cook rice per package instructions.
Meanwhile, coat large skillet with cooking spray. Over medium high heat, cook onion, celery and carrots 5 min or until tender. Add tilapia and cook 3 minutes. Carefully turn fish and add tomatoes and herbs. Add seasoning salt to taste. Simmer 2 minutes or until fish flakes easily. Serve over rice.
