Ingredients

  • 2 12 to 14 inch untreated cedar planks
  • 1/3 cup vegetable oil
  • 1-1/2 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1/3 cup soy sauce
  • 1/4 cup green onion; chopped
  • 1 tablespoon grated ginger root
  • 1 teaspoon garlic; minced
  • 2 1-1/2 pound salmon fillet; skin removed

Step 1

Soak cedar planks in warm water at least one hour.

Stir together vegetable oil, rice vinegar, sesame oil, soy sauce, green
onions, ginger and garlic in a shallow bowl or baking dish that's large
enough to hold fillets. Add salmon, turning to coat, then marinate,
covered, at lease 15 minutes and up to one hour.

Preheat an outdoor grill to medium heat (325°F to 375°F). Warm planks on
grate until they start to smoke and crackle, 3 to 4 minutes.

Transfer salmon to planks and discard marinade. Cover grill and cook until
salmon flakes with a fork, 8 to 18 minutes. approximately 8 minutes per
inch. (Pacific salmon tends to cook more quickly than Atlantic salmon).
