Bacon and Cheese Chicken

Ingredients

  • 1/2 cup of Dijon mustard
  • 1/2 cup honey
  • 4 1/2 tsp veg oil
  • 1/2 tsp lemon juice
  • 4 boneless chicken breast
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • dash paprika
  • 2 cup shredded cheddar cheese
  • 8 bacon strips, partially cooked
  • minced fresh parsley (optional)

Preparation

Step 1

Combine mustard, honey, lemon juice, and 1 1/2 tsp oil. Wisk and pour 1/2 cup of that in a large ziplock bag and marinate chicken for 2 hours.

In a large skillet, heat rest of oil. Brown chicken on all sides, dont cook through. Sprinkle salt, pepper, paprika and put in greased baking dish (put tinfoil on bottom, then grease for easy cleanup) Spoon rest of marinade over chicken, top with cheese and bacon. Bake uncovered at 375 degrees for 20-25 minutes.

You may also add sliced mushrooms on the chicken with the cheese and bacon if desired.
