Cajun Pork Tenderloin

  • 1 pound pork tenderloin
  • 2 tablespoons cajun seasoning
  • 2 teaspoons kosher salt
  • 2 tablespoons olive oil
  • 1/2 cup chicken stock
  • 2 tablespoons butter

Step 1

Preheat oven to 350F. Mix seasoning, salt and 1 tablespoon olive oil together to make paste. Rub paste all over tenderloin. Heat oven safe skillet over med-high heat. Add remaining olive oil to pan and sear pork on all sides.

Roast in oven until internal temp is 150F. Remove prok to cutting board. Deglaze pan with chicken stock. Reduce a little and swirl in butter to finish. Slice tenderloin thin and serve with sauce.
