Chicken and Noodles

Here is another traditional "family" recipe that we always have at Hank and Kathy's Farm, especially for Thanksgiving. This is delicious and everyone loves it! You can eat it on it's own, or served over mashed potatoes.

Ingredients
- 1 whole chicken(5 pounds)
- water
- or 2-3 cans chicken broth
- cooked chicken, shredded
- 1 package of Ramen noodles
- salt and pepper

Step 1
Place a rinsed chicken in a large stock pot and cover with water so that the chicken is covered. Boil the chicken, uncovered, in water until done. (Several hours, 2-3) Strain broth and put the broth into a large pot. Bring to a boil over medium heat and add additional water, if necessary. Add Reames noodles to broth in the large pot on the stove and add cooked chicken from the boiled chicken. I usually add the meat from one of the breasts, shredded between your fingers. Bring to a boil and reduce heat and simmer over low heat for 30 minutes, or until noodles are tender and the liquid has been reduced.
If not using a whole chicken, combine chicken broth, chicken and Reames noodles in a pot and bring to a boil. Reduce heat and simmer for 30 minutes until the noodles are tender.
