Chicken and sweet onion sandwiches

Ingredients
- 6 tablespoons EVOO
- 2 onions thinly sliced
- salt and pepper
- 1 cup chicken broth
- 1 1/2 pounds skinless boneless chicken breasts
- 4 kaiser rolls
- 1/2 lemon peel grated plus 1 tablespoon lemon juice
- 6 cups mixed greens

Preparation
Step 1
1. in large skillet heat olive oil over medium heat. Cook onions seasoned with salt and pepper until carmelized, about 20 to 30 minutes. Transfer to bowl.
Add chicken broth to pan scrapping up bits from pan. Pour into measuring cup.
2. using same skillet, heat 3 tablespoons olive oil over medium high heat. Season chicken with salt and pepper and return to skillet and cook turning once until cooked through and golden, about eight minutes. Transfer to plate. Pour in reserved chicken broth and cook until reduced about half, about 3 minutes.
3. Divide onions between toasted rolls and top with chicken
4. In a serving bowl whisk together remaining olive oil and lemon peel and lemon juice. Season with salt and pepper. Add mixed greens and toss. serve with sandwiches.
