Ingredients

  • 3 Tbs butter
  • 3 Tbs flour
  • 1 Tbs stone ground mustard
  • 3/4 Cup IPA beer
  • 1/2 Cup heavy whipping cream
  • 12 ounces aged cheddar cheese (shredded)
  • 8 slices sourdough bread
  • chopped parsley to garnish
  • kosher salt and freshly ground black pepper

Step 1

1. Preheat oven to broil.

2. Place the bread on a sheet tray in an even layer. Place in the oven to toast (about 1 minute per side).

3. In a medium saucepan, melt butter and stir in flour to form a dry paste. Stir in the mustard then slowly add beer while whisking. Cook for 3 minutes then stir in cream. Reduce to low and allow to cook for 3-4 more minutes or until slightly thickened. Remove from heat, stir in cheese until melted and adjust seasoning to taste.

4. Place the bread on a sheet pan and top each piece with a generous amount of sauce. Place under the broiler for 2 minutes or until lightly golden brown in spots.

5. Remove and serve warm with a garnish of parsley.
