Beef Enchiladas

- 1 pound ground beef
- 1 small onion chopped
- 1 can enchilada sauce
- cheddar cheese shredded
- mild taco sauce
- 4 7" flour tortillas
- vegetable oil

Step 1
Cook ground beef and onion over medium heat until meat is browned. Pour off any fat. Stir in enough taco sauce to moisten the beef mixture. In a small saucepan, pour about 1/2" vegetable oil. Heat to about 350 degrees. One at a time, fry tortillas for a few seconds on each side. Tortillas will inflate. Do not brown. Drain on paper towels to remove excess oil. Dip tortilla in enchilada sauce, coating thinly on each side. Spread 1/4 of the meat mixture in tortilla; sprinkle liberally with shredded cheese. Roll up and place seam side down, in an 8" square pan. Pour remaining enchilada sauce over tortillas and sprinkle with additional cheese. Cook in pre-heated 350 degree oven for 20 minutes. Serve with Mexican style rice and refried beans.
