Spinach Casserole

Ingredients
- 2 small boxes frozen chopped spinach (follow pkg. directions for cooking and draining)
- 2 eggs, beaten
- 1 cup mayo
- 1 can cream of mushroom soup
- 1 small onion chopped finely
- salt and pepper to taste
- 1 cup grated swiss cheese

Preparation
Step 1
Saute onion in 1 T. butter until soft and brown. Mix all ingredients with 1/2 c. cheese and then top with remaining cheese. Bake in an ungreased casserole dish for 1 hour at 325. You can add more cheese for more flavor.
