Ingredients

  • 2 large eggs
  • 2 c sugar
  • 2 c flour
  • 2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 1/2 c vegetable oil
  • 2 c grated carrots
  • 1 small can of crushed pineapple drained
  • 2 tsp. vanilla
  • 1 c flaked coconut
  • 1 c chopped walnuts
  • 1/2 c raisins
  • Frosting: 8oz. cream cheese softened, 4T softened butter, 4c sifted powdered sugar, 1tsp. vanilla, pinch of salt

Preparation

Step 1

. Sift together the dry ingredients

. Combine all the wet ingredients, mix the wet and dry ingredients in thirds

. Fold in the nuts, pineapple, coconut, and the raisins

. Divide the batter between 2 8" greased, round cake pans and bake at 350 degrees

. Make the frosting, combining and beating until fluffy

. Cool and turnout cakes, frost cake and serve
