Spiced Pumpkin Mini Loaves

Ingredients

  • 2 1/4 C. flour
  • 1 C. sugar
  • 1 C. raisins
  • 1/2 C. pecan halves, coarsely chopped
  • 1 T. pumpkin pie spice
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 2 eggs
  • 1 C. solid pack pumpkin
  • 2/3 C. milk
  • 1/2 C. vegetable oil

Step 1

1. Preheat oven to 325 degrees. Spray bottom of mini loaf pan with non-stick spray. In 2-quart mixing bowl, combine flour, sugar, raisins, pecans, spices, baking powder, baking soda, and salt; mix well.

2. In 4-quart mixing bowl, whisk eggs. Add pumpkin, milk, and oil; mix well. Add flour mixture to egg mixture; mix until well blended. Fill each cavity of loaf pan with about 1 C. batter.

3. Bake 45 minutes or until done. Remove from oven; cool in pan 10 minutes. Loosen sides of loaves from pan; remove to cooling rack.
