Ingredients
- 2 cups veg oil
- 1/2 cup flour
- salt and pepper
- 2 cups frozen slice okra, thawed and chopped
- 1/2 small onion, diced
- 1 egg
- 1/4 cup buttermilk

Step 1
In a large, heavy skillet, heat oil over medium. In a bowl, combine flour, 1/2 tsp salt, 1/4 tsp pepper, okra and onion, toss to coat. Whisk together egg and buttermilk, then add to okra mixture and stir until combined.
In batches, drop batter in 2-tbsp mounds into oil. With a small spatula, flatten mound and fry until golden, 4 minutes per side. Drain on paper towels. Season with salt before serving.
