Mustard-Horseradish Sauce (Bon Appetit 1999)

Great served with Beef Tenderloin or Filet Mignon.

Ingredients

• 2/3 cup sour cream
• 1/4 cup Dijon mustard
• 2 TBS olive oil
• 2 TBS prepared horseradish
• 2 TBS fresh tarragon, chopped

Mix all ingredients in small bowl to blend. Season with Salt & Pepper. (Can be made up to 1 day ahead).

Cover; chill.
