Ingredients

  • 1 - 125 g (4 ounce) package cream cheese, softened
  • 125 mL (1/2 cup) butter or margarine, softened
  • 250 mL (1 cup) all-purpose flour
  • Dash salt
  • 30 mL (2 tablespoons) butter or margarine
  • 2 - 227 g (8 ounce) packages Campbell's fresh mushrooms
  • 50 mL (1/4 cup) finely chopped onion or shallots
  • 30 mL (2 tablespoons) dry sherry
  • 1 mL (1/4 teaspoon) salt
  • Dash pepper
  • 1 egg, slightly beaten
  • Grated Parmesan cheese

Step 1

1. To prepare pastry, beat cream cheese and 125 mL (1/2 cup) butter together in a medium bowl; gradually add flour and dash salt, stirring until well blended; shape into a ball; wrap in plastic wrap and refrigerate until firm but not hard (about 40 min.).

2. To prepare filling, saute mushrooms and onion in 30 mL (2 tablespoons) hot butter until tender and liquid has evaporated (about 20 min.), stirring often; stir in Sherry, 1 mL (1/4 teaspoon) salt and pepper, remove from heat and cool.

3. Preheat oven to 190 ° C (375° F).

4. Roll half the pastry to a .5 cm (1/4 inch) thickness on a lightly floured surface; cut into rounds using a 7.5 cm (3 inch) cutter.

5. Spoon about 10 mL (2 teaspoons) filling in the centre of each round; fold pastry over to make a crescent shape; seal edges with the tines of a fork; brush with egg and sprinkle with Parmesan cheese.
6. Repeat with remaining pastry (if pastry becomes too soft, refrigerate until firm).

7. Arrange on ungreased cookie sheet; bake 20 min. or until golden brown; serve warm or at room temperature.


Makes 24 appetizers.

To prepare mushroom-shaped pastries as in photo:

Prepare Party Mushroom Pastries as in points 1-5. Prepare an additional 1/2_ recipe of the pastry. Roll to 1 cm (V, inch) thickness; cut into 24 triangles. Brush with beaten egg. To make each mushroom-shaped pastry: use one crescent pastry for top of mushroom, place a point of one triangle in centre of each crescent on straight edge. Gently press point of triangle to crescent to seal; transfer to cookie sheet and bake as above.
