Frozen Lemon Orange Cream

Ingredients

  • 3 eggs, separated
  • 1/8 tsp. salt
  • 1/2 cup diced fresh orange
  • 1/2 tsp. grated lemon rind
  • 3/4 cup vanilla wafer crumbs
  • 1/2 cup sugar
  • 1/4 tsp. lemon juice
  • 1 tsp. vanilla
  • 1 cup whipping cream, whipped

Preparation

Step 1

Beat the yolks in top of double boiler. Add sugar and salt and beat until thick. Stir in the lemon juice. Cook over hot water until thick.

Remove and stir in the oranges, vanilla and lemon rind.

Beat egg whites until thick and fold into the mixture.

Butter a 9" spring form pan. Sprinkle bottom and sides with crumbs. Pour custard in pan, sprinkle with remaining crumbs.

Place in freezer until ready to serve.
