Ingredients

  • 1 (8-inch) whole-wheat pita bread shell
  • 1/2 cup mozzarella cheese, divided
  • 1 cup mixed salad greens
  • 2 medium plum tomatoes, chopped
  • 1 small red onion
  • 10 chopped olives
  • 6 cooked, peeled, and deveined shrimp
  • 1 tablespoon feta cheese

Step 1

Preheat the oven to 450°F.
Top the pita with half the mozzarella cheese, and bake for 5 minutes at 450°F.
Combine the salad greens, tomatoes, onion, olives, and shrimp in a large bowl.
Top the bread shells with the shrimp mixture, and sprinkle with the feta cheese and the remaining mozzarella cheese. Cut into wedges, and serve.
