Ingredients
- 2 pounds ground pork
- 2.5 t salt
- 2.5 t brown sugar
- 1 T ground chipotle
- 1 T ground chile negro
- 2 T + 1/4 t ground ancho
- 2 T Mexican oregano
- 1 t + dash cumin
- 1/2 t ground cinnamon
- 1/2 t + dash granulated garlic
- 1 dash ground allspice
- 1 dash ground pepper
- 3 T vinegar
- 1 T water

mix all ingredients together and refrigerate for 1 to 4 days before using
