  • 2 lb ripe jersey tomatoes
  • 1/2 med onion, finely chopped
  • 2/3 cup honey
  • 1 Tbsp balsamic vinegar
  • 3 tsp Sri-racha
  • 1/2 tsp salt
  • fresh black pepper

Preparation

Step 1

1. Bring a large pot of water to a boil. Carefully drop the tomatoes into the boiling water for 15-30 seconds. Remove with slotted spoon. Put the tomatoes into a different bowl, in the sink, and rinse with cool water, enough to handle. Core the tomatoes and slip the skin off with your fingers. Seed and chop the tomatoes.

2. Dump the hot water out of the large pot and then add the tomatoes, onion, honey, balsamic vinegar, sriracha, salt and pepper. Stir and bring to a boil. Reduce the heat and let simmer for an hour or until there isn't and more liquid. Stir occasionally to check on it.
