HEAT OVEN TO 400 DEGREES. PAT TENDERLOIN DRY & RUB WITH OIL.
CRUSH PEPPERCORNS IN A SPICE GRINDER ---RESERVE FOR SPICES.
MIX IN A BOWL WITH SAKT AND PRESS INTO ENTIRE SURFACE OF TENDERLOIN.
BAKE AT 400. DEGREES FOR 45 MINUTES OR UNTIL INTERNAL TEMPERATURE REACHES 137 DEGREES. LET REST 5 TO 10 MINUTES UNTIL TEMPERATURE REAHES 145DEGREES BEFORE SLICING . SERVE WITH ROASTED GARLIC CREAM SAUCE OE RED WINE SHALLOT SAUCE
