Roasted Filet of Beef
Roasted Filet of Beef, best Beef tenderloin recipe!
This is the recipe I make for Christmas dinner to feed 14 to 16 people so you can use only 1 - 4 to 5 pound roast for around 8 people.
Ingredients
- Make this seasoning for each of the roasts:
- 2 - Whole filet of beef tenderloin, trimmed ( about 4 1/2 pounds each)
- 3 tablespoons good Olive Oil
- 4 teaspoons kosher salt
- 2 teaspoons coarsely ground pepper

Step 1
Place the filet on a sheet pan and pat it dry ( all over) with paper towels. Brush each Filet all over with the oil. Sprinkle it all over with the salt and pepper (it will seem like a lot but it makes a difference). Let sit at room temperature for 30 minutes.
Preheat the oven to 500 degrees.
If you want 1 roast to be cooked Medium Well place in oven for 30 minutes.
I then place he second roast that I want to be cooked Medium in 500 degree for only 15 minutes, then turn the oven down to 375 degrees and cook for 30 minutes.
You can use a meat thermometer in each roast to also gauge when it reaches your desired temperature.
Take meat out when down and cover with aluminum foil and rest for 15 to 20 minutes before slicing. Slice thickly to serve.
