Roasted Spicy Squash

The spice mixture is good with acorn squash or butternut. It's a little sweet and spicy, which is always a great combination!

Ingredients
- SPICE MIXTURE:
- Olive oil
- SQUASH: 3 acorn squash, sliced with skin (or peeled and cubed); or use a medium butternut squash, peeled and cubed.
- 1 t. salt
- 1/2 t. ground cumin
- 1 t. ground coriander
- 1/2 t. cinnamon
- 1/4 t. ground ginger
- 1/8 t. cayenne pepper
- 1 t. sugar

Preparation
Step 1
Preheat oven to 450 degrees. Drizzle a couple tablespoons of olive oil over squash in jelly roll pan (line pan with foil if you want).
Combine spices. Toss with squash. Arrange in single layer in pan(s).
Roast until tender and lightly browned (22-25 minutes), turning once during cooking.
