Tuna and bulgar salad

Ingredients
- 1/2 cup bulgar,rinsed and drained
- Juice of 1 lemon
- 2 Tbs olive oil
- 6 oz tomatoes, small ones are nice
- 1 can oil packed tuna
- 1 rib finely chopped celery
- 3 scallions
- sprinkle of mint, and parsley

Preparation
Step 1
Soak bulgar for 30 mins. Drain and rinse under running water, Press to expel as much water as possible.
Mix with 11/2 Tbs lemon juice and leave to soak. 20 mins
With remaining lemon juice, whisk in oil, salt and pepper.
Add toms, tuna,celery, scallions, mint and parsley.
Add to bulgar and leave to blend.
