Homemade tomato soup

  • 23 lbs ripe tomatoes
  • 3 cups chopped onion
  • 2 cups chopped green pepper
  • 1 cup chopped celery
  • 25 whole cloves
  • 2 cups flour
  • 2 cup brown sugar
  • 3 bay leaves
  • 1/4 cup canning salt



Step 1

cut stem and any bruises from tom ( don't have to peel)
place tom, onion, green peppers and celery in heavy-bottom kettle
place cloves and bay leaves in tea strainer and put in tom mixture
boil until all soft
put thru sieve
put juice in heavy kettle
mix together flour, brown sugar, and salt
add a ltl juice from tomatoes and beat with whisk until smooth
whisk in tomatoes when they come to boil
stir constantly until desired thickness
put in jars and put in canner
bring water to boil and boil for 15 min to seal jars
remove from water
makes 23 pints
