Ingredients

  • Prime Rib ( I bought a 13 pound roast, and asked the butcher to cut the ribs off but retie them back on for baking purposes)
  • Have your roast at room temperature before baking

Preparation

Step 1

Preheat oven to 450 degrees.
Pat the room temperature roast with paper towels
Smear the cut ends only with some room temperature butter.
Place the roast ribs down ( fat up) in a heavy roasting pan.
The bones are a natural rack you wont need a metal rack to cook this on.
Sear the roast at this high temp for 15 minutes, then turn the oven down to 325 for the rest of the cooking time. Every half hour baste the cut ends with the pan drippings.
Do not cover the roast.
About 45 minutes before estimated end of cooking time begin checking the internal temp. check this by inserting a thermometer so tip is in the thickest part of the beef not on fat or touching bone. Cook until roast internal temp is 120 degrees..Remove from oven and cover loosely with alum foil.Let sit 20- 30 minutes. Do not skip the resting stage. Cutting to soon will loose loss of juice.
Remember the roast will continue to cook as it sets. The internal temp will rise to 125- 130 degrees(which is medium rare) in approx. 15- 20 minutes.If allowed to rest as long as an hour the temp will continue to rise
Holding cooked roastuntil serving time..Immediately turn off the oven and leave door ajar after removing roast. Let roast sit 15 minutes on counter and then return to the oven door closed for up to an hour or even 2 hours for bigger roast. check the internal temp every 15 minutes it will rise approx. 10 at first then gradually subside.


For Christmas Eve serving, I needed to go to church services. and wanted it ready when I got home.We seared it at 500 degrees for 15 minutes, turned oven off roast was uncovered whole time in oven and we went to church, came home and took out , internal temp was 125 degrees, covered loosely with foil about 15 minutes. Some people liked it as it was and some threw it on the grill for a few minutes..
