Ingredients
- 1 stick unsalted butter, melted, plus more for greasing
- 2 lbs large red potatoes, peeled
- 2 cups sour cream
- 10 oz cheddar, shredded
- 1 (10 oz) can cream of mushroom soup
- 1 small onion, finely chopped
- 1 tsp salt
- 1/2 tsp pepper
- 2 cups crushed Ritz crackers

Preparation
Step 1
Preheat oven to 350. Grease a 9x13-inch casserole dish.
Shred potatoes on the large hole side of a box grater or using the grating blade of a food processor. Put in a large bowl. Add the next 6 ingredients. Turn the mixture into the prepared dish and sprinkle with the crackers. Pour the melted butter over the top of the crackers. Cover with foil and bake 45 minutes, then uncover and bake 20 minutes more, or til the top is lightly browned.
