  • 1 c. yellow cornmeal
  • 1 c. all-purpose flour
  • 1/2 c. sugar
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • 1 c. milk
  • 1/4 c. vegetable oil
  • 1 egg, lightly beaten

Step 1

Whisk all ingredients together. Heat a cast iron skillet on stove top with layer of vegetable oil. Heat until oil ripples. Add batter to hot oil and transfer to 400 degree oven and bake for 20-25 minutes until a toothpick inserted comes out clean.
