- 2 lbs Broccoli Rabe
- 3 large cloves of garlic sliced lengthwise
- 1/3 cup extra-virgin olive oil
- 1 tsp sea salt
- lemon wedges
cut off stem ends. cook in two batches in a 6-8 quart pot if salted boiling water until just tender about 3 minutes. Transfer with a slotted spoon to ice and cold water to stop cooking process. Drain well. cook garlic in oil in 12 inch fry pan until golden about 5 minutes. Add Broccoli toss to cover with oil and cook for 3 to 5 minutes until cooked through. Toss with salt. Broccoli cab be boiled up to 6 hours ahead.
