  • 2-3 lb Bone-In Center Cut Pork Loin Roast (should be pale in color)
  • Salt and pepper to taste

Preparation

Step 1

Preheat oven to 325 degrees. Place pork fat side up/bone side down in shallow roasting pan. Sprinkle with salt and pepper. Do not add liquid or cover. Roast for 20-30 minutes per pound until internal temp reaches 155-160 degrees with and instant read thermometer. Cover loosely with foil tent after removing from oven and let rest 15-20 minutes before carving. Internal temp will continue to rise 5-10 degrees as the roast rests. To serve, carve into ¾” slices.

Serve with mashed potatoes and gravy, “prune-spice muffins”, vegetable of choice and apple sauce.
