Banana Butter Rum Pudding

Banana pudding is the ultimate comfort food. Soft, warm, and slightly sweet, it's easy to whip up and absolutely delicious. This is a pretty standard recipe for homemade banana pudding, with the addition of brown sugar and rum flavoring for a touch of added flavor. If you happen to have heavy cream in your fridge, beat it up. There's something about the flavor of fresh cream that so beautifully complements this dessert, as opposed to that whipped topping stuff. Likewise, very ripe bananas (even if you're not much of a fan. I'm not. I like my banana's almost green) add such a beautiful flavor to the final dish, so make sure you use 'em!
Ingredients
- 3 tablespoons butter
- 1/4 cup flour
- 3 cups milk
- 2/3 cup light brown sugar
- 3 egg yolks
- pinch of salt
- 1/4 teaspoon rum flavoring
- 1/2 teaspoon vanilla
- Nilla wafers
- 3 ripe banana's

Step 1
In a large pot, melt the butter over medium heat, then whisk in the flour until a thick paste forms. Slowly whisk in the milk. Add the brown sugar, and yolks (Make sure you temper your egg yolks so they don't scramble), whisking until smooth. Continue whisking over medium heat until thickened. Once thickened, remove from heat and whisk in salt, rum flavoring, and vanilla. Serve warm or cold with Nilla wafers and sliced bananas. Top with fresh whipped cream, if desired.
