Seafood Lasagna

Ingredients

  • 16 oz package lasagna noodles
  • 2 tablespoons olive oil
  • 1 garlic clove, minced
  • 1 large onion, thinly sliced
  • 2 - 16 oz jars Alfredo sauce
  • 1 pound shrimp, peeled and deveined
  • 1 pound bay scallops
  • 1 pound crab meat
  • 1 egg
  • 20 oz ricotta cheese
  • 1/4 cup minced fresh parsley
  • 6 cups shredded Italian cheese blend

Preparation

Step 1

Preheat oven to 350. Cook pasta in lightly salted water and drain.

Heat oil in large saucepan. Sauté onion and garlic. Add 2 jars Alfredo sauce. Stir in shrimp, crab and scallops. Simmer 5-10 minutes or until heated through.

Combine ricotta, egg and parsley in medium bowl.

Layer 1/4 cup ricotta mixture over bottom of prepared baking dish. Place 3 lasagna noodles evenly over ricotta mixture (do not over lap noodles). Spread one-third of remaining ricotta mixture over noodles. Top with one-third of seafood mixture and sprinkle with one third of shredded cheese. Repeat procedure twice beginning with lasagna noodles and ending with shredded cheese.

Bake for 35 to 45 minutes, or until hot and bubbly. Let stand for 10 minutes before serving.
