Ingredients

  • 2 Tbsp olive oil
  • 1 cup onion, chopped
  • 1 tsp garlic cloves, minced
  • 1 1/4 tsp table salt
  • 1/4 tsp black pepper
  • 1 tsp ground coriander
  • 3/4 cup potatoes, peeled and diced
  • 3/4 pound lettuce, coarsley chopped
  • 3 cups fat-free chicken broth

Preparation

Step 1

Heat oil in a medium sauce pan over medium low heat. Saute onion and garlic until soft (3-5 minutes). Add salt, pepper & coriander and cook for 1 minute.
Add potato and stir to coat. Add lettuce and broth and bring to a boil. Cover, reduce heat and simmer until potatoes are tender and lettuce is cooked about 10 minutes.
Transfer to a blender or use immersion blender to puree until smooth.
