Ingredients

  • 3/4 cup butter
  • 3/4 cup flour
  • 9 cups chicken stock
  • 9 cups milk
  • 1 tsp salt
  • 1 1/2 tsp pepper
  • 5 cups cooked broccoli
  • 1 1/2 lbs processed cheese
  • 3 cups grated cheese

Preparation

Step 1

Cook broccoli forettes
Melt butter and add flour
Reduce heat to low and cook stirring constantly for 2 minutes
Mix in chicken stock and milk
Season with salt and pepper
Bring to a boil and reduce heat to low
Simmer for 10 minutes
Gradually mix in the cheeses
Add broccoli
