Wasabi-Crusted Tuna

Ingredients
- 1 tablespoon olive oil
- 1/4 cup wasabi peas (from supermarket snack or Asian-foods section)
- 1/4 cup panko bread crumbs
- 2 tablespoons mayonnaise
- 2 skinless yellow-fin tuna steaks (about 6 ounces each)

Step 1
Preheat oven to 400 degrees. Heat oil in an ovenproof large skillet over medium-high heat. Combine wasabi peas and panko in a blender or food processor; process until it forms fine crumbs. Pour crumbs onto a plate. Spread mayonnaise on both sides of fish and dip in crumbs. Sear in hot oil just until golden, about 1 minute per side. Place skillet in preheated oven and bake 8 to 12 minutes, to desired doneness. (Tuna steaks are traditionally served medium-rare, but some people prefer them cooked and flaky throughout.)
