Ingredients

  • 8 medium fresh ears of corn cut off kernels or 2 10 oz pkg frozen corn
  • 1 cup cubed pelled potato
  • 1 cup chopped onion
  • 2 tsp instant chicken bouillon
  • 1/4 tsp pepper
  • 3 cups skim milk
  • 4 Tbsp nonfat dry milk powder
  • 4 TBSP flour
  • 1/2 cup skim milk
  • 2 Tbsp cooked bacon

Preparation

Step 1

Combine corn,potatoes,onion,bouillon,pepper and 2/3 cupwater in a large saucepan.
Bring to a boil reduce heat and cover. Simmer for 20 min. Stir in 3 cups of milk
Stir together the dry milk and flour in a small bowl. Gradually stir in the 1/2 cup skim milk. Stir into corn soup. Cook until thick
Ladle into bowls and sprinkle with bacon
