Flounder Stuffed with Crabmeat

Ingredients

  • Sauce:
  • 2 lbs Flounder filets
  • 3 oz chopped mushroom can
  • 1/4 cup chopped onion
  • 3/4 cup butter
  • 7 oz can crabmeat
  • 1/2 cup crushed saltines
  • 2 tablespoons parsley
  • 1/2 teaspoon salt
  • dash pepper
  • 3 tablespoons butter
  • 1/2 cup wine
  • paprika
  • 3 tablespoons flour
  • milk
  • 1 cup swiss cheese

Step 1

Drain mushrooms. Reserve liquid. Cook onion in 1/4 cup butter for 3 minutes. Add mushrooms, crab, crackers, parsley, salt and pepper. Spread filling- fold and roll.

Melt 3 tablespoons margarine. Add flour and salt. Add enough milk to mushroom liquid to make 1 1/2 cups liquid. Add liquid to wine in saucepan. Cook and stir until thick. Bake uncovered at 400 degrees for 30 minutes. Sprinkle with cheese and paprika. Bake 5 minutes.
