Ingredients

  • large mango, peeled, seeded and finely chopped (about 1 cup)
  • 1 large sweet red pepper, halved, cored, seeded and finely chopped
  • 1/4 cup finely chopped shallots OR: white part green onion
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 large clove garlic, finely chopped
  • 1/4 teaspoon grated lemon rind
  • 1/4 teaspoon salt
  • 1/8 teaspoon liquid red-pepper seasoning

Step 1

Combine mango, red pepper, shallots, lemon juice, olive oil, garlic, lemon rind, salt and red-pepper seasoning in medium-size bowl; toss together until well combined.

Make Ahead: Salsa can be made up to 1 day ahead and refrigerated, covered, until ready to serve. It's actually better if made ahead so the flavors have a chance to blend.
