Ingredients
- large mango, peeled, seeded and finely chopped (about 1 cup)
- 1 large sweet red pepper, halved, cored, seeded and finely chopped
- 1/4 cup finely chopped shallots OR: white part green onion
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 large clove garlic, finely chopped
- 1/4 teaspoon grated lemon rind
- 1/4 teaspoon salt
- 1/8 teaspoon liquid red-pepper seasoning

Preparation
Step 1
Combine mango, red pepper, shallots, lemon juice, olive oil, garlic, lemon rind, salt and red-pepper seasoning in medium-size bowl; toss together until well combined.
Make Ahead: Salsa can be made up to 1 day ahead and refrigerated, covered, until ready to serve. It's actually better if made ahead so the flavors have a chance to blend.
