Maple Roasted Brussel Sprouts

Ingredients
- 2 1/4 lbs Brussels sprouts cut lengthwise
- 1/4 cup olive oil
- 1 shallot, diced
- 1 stick unsalted butter
- 2 Tbsp light brown sugar
- 1/4 cup maple syrup
- 1/2 cup dried cranberries
- 1 1/2 Tbsp cider vinegar
- 6 slices cooked center cut bacon, chopped

Preparation
Step 1
Heat oil in large skillet, add shallots. Saute until clear, approximately 4 minutes. Add Brussels sprouts. Season with salt and pepper. Cook over high heat without stirring until they are browned-about 2 minutes. Add butter and brown sugar. Cook over moderately high heat stirring occasionally until sugar is melted. Add maple syrup and dried cranberries; cook until Brussels sprouts are crisp tender, stirring occasionally, approximately 7 minutes. Do not over stir as Brussels sprouts will fall apart. Stir in vinegar and add chopped bacon.
Transfer to bowl with slotted spoon. Bring liquid to boil and slightly thickened, approximately 2 minutes. Pour over and serve.
