Roast Filet of Beef

Ingredients
- Mustard Horseradish Sauce:
- 1 tenderloin of beef (about 3 1/2 lbs.)
- 3 cloves of garlic, thinly sliced
- 1 tablespoon of olive oil
- Coarse salt and coarsely groud black pepper to taste
- 1/3 cup dijon-style mustard
- 1/3 cup sour cream
- 1/4 cup mayonnaise
- 1/4 cup well-drained prpared white horseradish

Preparation
Step 1
Preheat oven to 425.
Make small,cuts into filet and insert garlic slices. Brush the meat w/ olive oil and rub it w/ salt and pepper.
Place the meat on a rack in a shallow roasting pan and forst for 15m. at 425.
Reduce temperature to 350 and roast for 20 minutes more for "medium rare", add 5 minutes for medium.
Let the roast rest at room temperature for 20 minutes before slicing.
Mustard Horseradish Sauce:
Combine all ingredients in small bowl. Refigerate, covered until needed.
