This is great as a main entrée or an appetizer.
- 2 lbs medium or large deveined peeled shrimp
- 1/4 cup olive oil
- 1 tbsp. minced garlic
- 1/2 cup dried seasoned bread crumbs
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Preparation time 20mins
Cooking time 30mins
Soak 10- or 12-inch skewers in water for 30 minutes; drain.
Combine the shrimp, olive oil and garlic in a bowl and toss to coat the shrimp. Add the bread crumbs and parsley and toss to coat the shrimp. Season with salt and pepper.
Thread the shrimp onto the skewers. Chill, covered, for up to 3 hours. Grill over medium-hot coals for 4 minutes or until shrimp turn pink. Serve with cocktail sauce or lemon wasabi sauce.
