Sweet-Sour Pork or Spareribs

Ingredients

  • TO MAKE SAUCE:
  • 3/4 c sugar
  • 1/4 c soy sauce
  • 1/3 c vinegar
  • 2/3 c water
  • 3 T cornstarch
  • 2 lbs uncooked pork, sliced in strips
  • 1/4 c onion, sliced
  • 1 medium cucumber, peeled & sliced
  • I like to add:
  • 1 bell pepper, cored and cut in strips
  • 1 can chunk pineapple

Preparation

Step 1

Make sauce ahead of time. Mix ingredients and cook over low heat until thickened, stirring constantly.

Prepare Meat:
Place pork in kettle with 1 c cold water and boil 20 minutes or until tender. Pour off water, if there is any left. Cool.

While meat is cooling, saute onion, cucumber, pepper. Remove from pan.
To cool meat, add 2 T soy sauce & 2 T cornstarch; mix. Heat oil in deep fryer (390F) and fry the meat until crisp & brown. Remove & drain.

Combine meat with hot sweet & sour sauce, sauteed vegetables & pineapple.

Serve with rice.
