Ham and Corn Chowder

Ingredients
- 1 Tbsp. butter
- 2 tsp oil
- 1 onion finely chopped
- 2 Tbsp. flour
- 1 lb. potatoes (peeled and diced)
- 3 cups hot chicken broth
- 1 bay leaf
- 1 cup of milk
- 11 0z can corn
- 1/4 lb diced ham
- 1/2 cup cream (or whipped cream)

Preparation
Step 1
1)Melt butter with oil in a large pan and add onion. Cook for about 5 minutes until vegetables are softened. Sprinkle in the flour and stir for 1-2 minutes.
2)Add potatoes. Pour in the chicken stock and bring to a boil. Add bay leaf, salt and pepper to taste. Cover and simmer for 20 minutes or until the potatoes are very soft.
3)Stir in milk and then add the corn and ham and heat throughout for 5 minutes. Remove bay leaf and stir in cream.
