Ingredients
- 3 nice firm eggplants
- spaghetti sauce with out meat (add mushrooms)
- peanut oil for frying
- Italian bread crumbs
- 2 eggs with milk for wash
- angel hair pasta (optional)
- mozzarella cheese grated
- Parmesan cheese grated

Preparation
Step 1
Peel eggplants and slice 1/2" thick. Dip in egg wash and then bread crumbs and fry until both sides have browned. Place on paper towels to drain. Stack 3 pieces of fried eggplant on a plate and pour a generous portion of tomato sauce on top. Top this with mozzarella cheese and sprinkle with Parmesan. If desired this can all be a topper for angel hair pasta. Either way it is delicious.
