Blue Ribbon Onion Rye

Ingredients
- 2 cups milk
- 1/4 cup sugar
- 4 tsp salt
- 1/4 cup vegetable oil
- 1 package yeast
- 1 cup lukewarm water
- 4-5 cups white flour
- 1 Tbsp caraway seeds
- 1/3 cup chopped onion
- 3 1/2 -4 1/2 cup rye flour

Preparation
Step 1
Scald milk and add sugar, salt and vegetable oil. Stir and cool.
Soften yeast and add to milk. Add white flour and mix.
Knead in more rye on board, grease bowl and top, cover and rise (1 hour).
Punch down by folding edges to center; cover and rise to double.
Grease pans and sprinkle with caraway seeds. Shape loaves, brush with cream, sprinkle with salt. Cover and rise 1 hour.
Bake at 350 for 1 hour.
