Beef and Beer Chili

Ingredients
- 1 lb extra-lean ground beef
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1/2 red bell pepper, diced
- 1/2 c dark beer
- 1 can (15 oz) diced fire-roasted tomatoes
- 2 T chili powder
- 1/2 t cumin
- Salt and pepper to taste
- 1 can (15 oz) pinto beans, drained

Preparation
Step 1
Heat a large soup pot over med-high heat. Add beef and cook until just barely pink, breaking meat into crumbles while cooking. Add onion, garlic, and bell pepper. Cook 2 mins or until beginning to soften. Add beer and scrape to release any browned bits stuck to the bottom of the pot. Add tomatoes (with their juices). Stir in chili powder, cumin and salt and pepper to taste. Gently stir in beans. Bring to a boil, reduce heat to low, and simmer 30 mins, stirring occasionally.
