Ingredients
- Icing:
- 2 cups sugar
- 1 1/2 cups oil
- 3 eggs
- 2 tsp. vanilla
- 2 1/4 cups flour
- 2 tsp. cinnamon
- 2 tsp. baking soda
- 1 tsp. salt
- 1 cup shredded coconut
- 3 cups shredded carrots
- 1 (8-oz.)can drained and crushed pineapple
- 1 cup chopped pecans
- 1 pkg. cream cheese
- 1 stick butter, softened
- 1 box 10X sugar
- 2 tsp. vanilla
- 1 cup chopped pecans

Step 1
Combine sugar, oil, eggs, and vanilla in a large bowl. Fold in flour, cinnamon,baking soda, and salt. Add carrots, pecans,coconut, and pineapple. Pour in prepared 9x13 pan. Backe at 350 degrees for 40 to 45 minutes. Cool for 10 minutes and take out of pan. Icing: Cream butter and cream cheese. Add remaining ingrediants except nuts. Mix until smooth. Add pecans and spread on completely cooled cake.
