Ingredients
- 1 tbsp olive oil
- 3/4 cup finely chopped onion (1 onion, smallish)
- 1/2 cup diced green pepper chopped fine (1 pepper)
- 1 cup tomatoes, diced (1 14 oz can)
- 1 can seasoned black beans, drained with juice reserved
- 1/2 tsp thyme
- 1 tsp garlic salt
- 3 tbsp cider vinegar
- 1/2 tsp hot pepper sauce
- 2 cups cooked rice
- Lime wedges (optional)

Preparation
Step 1
In large skillet, cook onion and green pepper in olive oil for 5 to 6 minutes.
Stir in tomatoes, beans, thyme and garlic salt and cook 3 minutes.
Add vinegar, pepper sauce, reserved juice and cook 5 minutes more.
Serve over rice.
