Roasted Garlic Dressing

Ingredients

  • 4 heads garlic
  • EVOO
  • Coarse sea salt
  • Freshly ground black pepper
  • 3 sprigs thyme, chopped
  • 1/4 c Champagne vinegar
  • 1/4 c water
  • 1 T Dijon mustard
  • 2 T minced fresh tarragon
  • 1/2 t minced shallots

Preparation

Step 1

1. Cut heads of garlic crosswise. Rub cut side of each piece w/EVOO; sprinkle w/a pinch of salt & pepper. Rejoin halves of the garlic heads, wrap in aluminum foil, & roast in a 400F oven for 45 min to 1 hr.
2. Once cooled, squeeze softened garlic from each clove into a bowl. Whisk in 1/3c EVOO & thyme.
3. Add 1t salt, 1/4t pepper, vinegar, water, mustard, tarragon, & shallots. Stir.
4. While whisking slowly, drizzle in 1/2c EVOO.
5. Store covered in the refrigerator for up to 3 days.
